Hi! I grew up in SoCal, too, and I know exactly what you mean. I moved to Portland and lived there for 3 years. Your impression of Portland from your early visit is still accurate. In general, the city is filled with great energy, is largely liberal and has a huge cultural arts scene. It has a very relaxed, laid-back, unpretentious atmosphere.
But no. It does NOT extend to the whole state. Oregon has white supremacist groups and a militia, and at least one weird religious cult. Not unlike most states! You can generally consider any university town in Oregon to have similar elements to Portland. But if you're looking at OSU, that's in Corvallis, which is vastly different from Portland, more rural, more conservative, probably swung with McCain in the election. Not exactly bad, but probably not the scene you seek.
I'd recommend you look into OHSU in Portland. The campus is in a fabulous setting and is on the new tram line. They are well respected, near downtown, and they have a pharmacy program. Good luck!

For the most part what you have experienced with Oregon people does extend to throughout the rest of the state. Obviously, no matter where you go you will run into people that have a more negative affect on others, either by being rude, nasty, inappropriate, or overly opinionated. Oregon is described as a very liberal state. But I don't feel that we have the issue of thinking that we are the right and everyone else is wrong. We have such a diverse culture in Oregon that it is really hard for one person to get away with thinking that they are right without considering other options. I would say that we Oregonians are very down to earth, laid back, open minded people.
If you fell in love with Portland than you may want to look into taking your pharmacy classes at Pacific University in Forest Grove, they are much much closer to Portland than Eugene is! And I hear that they have amazing medical courses there. It's a smaller town, quite quaint, but still very much closer to Portland and the metro area.
If you want any more information about anything else in regards to Oregon or the surrounding area, I would love to help you out! Just send me an email at taciturntalker@yahoo.com
PS - We aren't all hairy (no more than wherever you are from), we don't all have big feet (I have rather small feet, so I've been told) and I don't think we have any Amish communities here in Oregon, let alone a huge population. That's Pennsylvania.
